We like to keep the simple ingredients for this recipe stocked in the trailer all summer. All you need is herb and garlic cream cheese, salsa, a variety of shredded cheese, diced green onions, bacon, and tomato.

Ingredients

  • Herb and garlic cream cheese – The creamy, flavor-packed base that brings rich comfort food vibes to every cheesy bite.
  • Tex Mex cheese, shredded – Adds a little kick and bold flavor.
  • Mozzarella cheese, shredded – Melts like a dream and gives the dip that irresistible stretchy cheese pull.
  • Parmesan cheese, shredded – A salty, savory upgrade that deepens the flavor.
  • Salsa – Brings freshness, tang, and just enough spice to cut through all that glorious cheese.
  • Bacon strips, cooked, diced – Crispy, smoky goodness.
  • Roma tomato, diced – Adds a pop of freshness and color.
  • Green onion stalks, diced – A mild onion crunch that brightens everything up.
  • Tortilla chips – The perfect sturdy scoop for hauling maximum cheese from skillet to mouth.

Note: Reserve 1-2 Tbsp each of the bacon, tomato, and green onions for topping.

Instructions

1. Combine ingredients in a bowl.

3. Scoop into a small skillet.

4. Cook on the barbecue or over the fire for 20 minutes.

  • 1/2 cup Tex Mex cheese shredded

  • 1 Roma tomato diced
  • 2 green onion stalks diced
  • Tortilla chips for dipping
