Servings 1 serving

Ingredients

  • 1/2 Bell pepper diced
  • 1/4 White onion diced
  • 1/4 cup Ham diced
  • 1 Egg
  • 1/8 cup Cheese shredded
  • 1 tsp Olive oil
  • Salt & pepper

Instructions

  • Prepare ingredients.
  • Add oil, veggies, and ham to a skillet.
  • Cook over the fire or grill for 5-10 minutes or until onion is opaque.
  • Add an egg and cook for an additional 5 minutes.
  • Top with cheese and season with salt and pepper.

Notes

  • Dice the veggies and ham at home and pack in a freezer bag to use later.
  • When cooking with cast iron, be sure to season the surface first.
  • Always use gloves or oven mitts while cooking, as the surface of the iron will be hot.
  • Cook the recipe over an open fire using hot coals, not open flames. A fire that is too hot will burn the outside of your recipe and not cook the inside.
  • Be sure to clean the cast iron with a rough vegetable scrubber, rinse, and dry thoroughly before storing.
