Campfire Breakfast Skillet Recipe

This easy campfire breakfast skillet is loaded with veggies, ham, eggs, and cheese — quick to cook, easy to clean, and perfect for lazy summer mornings outdoors.

- 1/2 Bell pepper diced
- 1/4 White onion diced
- 1/4 cup Ham diced
- 1 Egg
- 1/8 cup Cheese shredded
- 1 tsp Olive oil
- Salt & pepper
Prepare ingredients.
Add oil, veggies, and ham to a skillet.
Cook over the fire or grill for 5-10 minutes or until onion is opaque.
Add an egg and cook for an additional 5 minutes.
Top with cheese and season with salt and pepper.
- Dice the veggies and ham at home and pack in a freezer bag to use later.
- When cooking with cast iron, be sure to season the surface first.
- Always use gloves or oven mitts while cooking, as the surface of the iron will be hot.
- Cook the recipe over an open fire using hot coals, not open flames. A fire that is too hot will burn the outside of your recipe and not cook the inside.
- Be sure to clean the cast iron with a rough vegetable scrubber, rinse, and dry thoroughly before storing.
