Ingredients

  • 1 175 g round of brie scored with a knife
  • 1 apple sliced
  • 1 large plum sliced
  • 1 bunch of green seedless grapes
  • Handful of halved and pitted cherries optional
  • 2 Tbsp chopped pecans
  • 1 Tbsp hot honey or spicy fig jam
  • 1/2 tsp chipotle mango seasoning
  • 1 sprig fresh rosemary
  • Crackers for dipping

Instructions

  • Prepare your campfire or heat up the BBQ or oven.
  • Place the brie wheel in the center of a 10-12” skillet. Score lines into the top with a sharp knife.
  • Surround the cheese with apple slices, plum slices, grapes, and halved cherries.
  • Sprinkle pecan pieces over the top. Drizzle with hot honey or spicy jam. Add chipotle mango seasoning and a sprig of rosemary.
  • Position the skillet over the grate of your fire and let it cook until the brie is warm and melty (around 10-20 minutes, depending on fire temperature).
  • Once melty and irresistible, serve directly from the skillet with plenty of crackers or sliced baguette for dipping.

Notes

    • Choose Your Fire Wisely: The heat of your fire will determine how quickly the brie melts. Adjust the distance from the flames for perfect gooey consistency.
    • Experiment with Seasonings: Don’t hesitate to try different seasonings like cinnamon-sugar, rosemary, or even a dash of bourbon for a unique twist.
    • Use Fresh Ingredients: Fresh, seasonal fruits like plums and cherries enhance the flavors and add a vibrant touch to your dish.
    • Serve Hot: Skillet brie is best enjoyed warm, straight from the fire. Don’t wait too long to dig in!
