Garlic Butter Chicken Skillet

Elevate your camping cuisine with our garlic butter chicken skillet — juicy chicken, infused with rich garlic butter, and seared to perfection in a cast iron skillet.

- 3 boneless skinless chicken breasts
- 1 tsp Italian seasoning
- 1 Tbsp extra virgin olive oil
- 4 garlic cloves minced
- 3 Tbsp salted butter
- 1/2 cup white wine or chicken broth
- Fresh parsley for garnish
Pat the chicken breasts dry with a paper towel.
Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and pound to an even thickness.
Season the chicken breast with Italian seasoning.
Add 1 Tbsp olive oil to a large skillet.
Heat over medium until the oil starts to sizzle.
Add the chicken breasts to the skillet and cook until browned, about 5 minutes.
Flip and cook for an additional 3-5 minutes.
Remove the cooked chicken to a tray and cover to keep warm.
Repeat with any remaining cutlets.
Add garlic and butter to the pan and cook until fragrant.
Add broth and deglaze the skillet, making sure to scrape up the brown bits from the bottom of the pan.
Add chicken back to the pan and spoon the sauce over the chicken.
Cook until the chicken is heated through and the sauce has reduced slightly.
Top with fresh parsley.
- Try this easy recipe with boneless skinless chicken thighs or chicken tenders instead of chicken breasts.
- If the sauce seems too thick, add in some extra chicken stock.
- When planning for camping, we like to do as much meal prep as possible before we leave. Having easy access to hot running water makes cleanup much easier.
- To be sure your chicken is fully cooked, check the internal temperature using a meat thermometer inserted into the thickest part of the meat.
- Store any leftover chicken in the fridge or cooler in an airtight container.
