The Best Foil Packet Breakfast Bake

This foil packet breakfast bake is the ultimate camping breakfast — a savory blend of eggs, sausage, veggies, and cheese, all wrapped up for easy cooking and zero dishes!

Ingredients
  

  • 250 g ground Italian sausage cooked
  • 6 eggs
  • 1 cup diced hash browns
  • 1/2 bell pepper diced
  • 1/2 white onion diced
  • 1/2 cup cheese shredded
  • 1 green onion stalk diced

Instructions
 

  • Combine eggs, pepper, onion, cooked sausage, and cheese.
  • Layer hash browns on the base of a foil packet or pie plate. Pour egg mixture overtop. Wrap entire packet in foil.
  • Bake over the coals of a fire or in an oven at 350 degrees for 45 minutes or until the egg is set.
  • Serve with green onion.

Notes

  • Do the prep work of making the egg mixture at home and pack into a large freezer bag to use while camping.
  • To make foil packets, cut two pieces of aluminum foil to about 12". Layer them one on top of the other. Place recipe ingredients in the center. Bring up the longer edges of the foil and fold together. Grasp one end and roll it up, then repeat with the other end.
  • Alternatively, foil pie plates may be used to cook foil packet meals. Simply place the recipe ingredients in the pie plate and cover with aluminum foil before cooking.
  • For best results, cook the foil packet on a grill over the open fire.
  • Use caution when handling the foil packet, as it can become hot while cooking.
