I don’t know about you, but when talking about favorite side dishes, potatoes of all sorts are guaranteed to be at the top of the list for our family. Mashed, roasted, french fried, scalloped – there really is no wrong way to eat them.

There are, however, easier and more complicated ways of preparing them. The recipe I am sharing with you today is just about as simple as it gets, which I love.
It is actually really more of a cooking method than anything else.
This perfect baked potato recipe is a super easy side dish for any occasion. It works equally well with a gas grill, charcoal grill, or over a campfire.
We love making these baked potatoes when we are camping, because we don’t need any extra pots and pans. No need to wash all those dishes.
These potatoes are also great for serving any size group. Turn them into twice-baked potatoes and add that little extra something special to an intimate steak dinner for two.

Supplies
- Heavy duty foil
- Large bowl
- Fork
- BBQ grill
Ingredients
- Large russet potatoes
- Cup butter
- Kosher salt
Directions
1. Wash and dry potatoes thoroughly.
2. Using the tines of a fork, poke holes into the potatoes.
3. Create an aluminum foil packet and place each potato inside of its own packet.
4. Top each potato with 2 Tbsp butter and a sprinkle of salt before closing the packet.
5. Place potatoes on the BBQ grill to bake for 60 minutes or until fork tender.
Tip: rotate the potatoes every 10 mins to help them cook faster and more evenly.
When cooked, cut the potatoes open and add your favorite baked potato toppings!

Tips for foil packets
- Instead of adding butter to the foil packets, try olive oil, grapeseed oil, or vegetable oil.
- Poking small holes into whole potatoes before grilling them is an important step, so don’t skip it. The holes allow steam to escape from inside of the potato and prevent it from exploding.
- I find that I get the best results when I use russet potatoes for baking, because they develop such wonderfully fluffy insides during the cooking process. You could use any variety you like though. Try red potatoes, Yukon gold, or even sweet potatoes.
- When making foil packet potatoes, or any other foil packet meals, be careful not to overfill the piece of foil. You want to be able to seal the packet shut securely, so nothing falls out.
- If you are including meat in your foil packs, check the internal temperature using a meat thermometer to ensure it meets food safety guidelines.
- Keep leftovers refrigerated in an airtight container or covered with plastic wrap.
