  • 4 chicken breasts cut into strips
  • 1 packet of Hidden Valley Ranch seasoning
  • 2 cups small yellow gold potatoes halved
  • 1 cup cheddar cheese shredded
  • 4 slices of bacon cooked
  • Fresh parsley garnish

Instructions

  • Preheat the BBQ grill to 400 degrees F.
  • Cut up the potatoes and slice the chicken.
  • Cook the bacon.
  • Divide the ingredients equally onto four sheets of foil (about 12” long).
  • Layer potatoes, chicken, cheese, and bacon, then sprinkle the ranch seasoning mix equally over top.
  • Fold aluminum foil into a packet.
  • Place the foil packets directly onto the grill grate.
  • Cook for 20-25 minutes or until the chicken is completely cooked.
  • Garnish with parsley.

Notes

  • When planning for camping, we like to do as much prep as possible at home, while we have access to hot running water. It makes cleanup so much easier.
  • These foil packs can also be cooked on a baking sheet if you are worried about the packet leaking on the grill.
  • Use sheets of heavy-duty foil or double wrap your packet if you are worried out breakage.
  • Open packets carefully. They release quite a bit of hot steam.
  • Give your foil a light coating of non-stick cooking spray to help prevent your ingredients from sticking.
  • Be sure to cut your chicken breasts into evenly sized pieces for even cooking.
  • Any leftovers can be stored in an airtight container in the fridge or cooler.
