Foil Packet Sausage and Green Beans

Foil packet sausage and green beans—an easy, flavor-packed camping meal with tender potatoes, smoky sausage, and minimal cleanup.

Ingredients
  

  • 1 lb red & white baby potatoes
  • 12 oz Mennonite sausage sliced
  • 8 oz green beans trimmed and cut in half
  • 1 medium white onion diced
  • 1 Tbsp chipotle mango seasoning
  • 2 Tbsp olive oil

Instructions
 

  • Add the potatoes to a pot of water and bring to a boil over medium-high heat. Boil for 10 minutes, then drain. Allow to cool before placing into a large freezer bag to take camping.
  • Add everything to a large bowl and toss well to combine.
  • Create 4 (12-inch) square sheets of aluminum foil and 4 (11-inch) square sheets of parchment paper. Place parchment on top of each foil sheet, then evenly divide the mixture onto each. Wrap tightly so no juices escape.
  • Preheat a grill to medium-high (around 400°F), leaving one section unlit for indirect heat. Place foil packs on the grill over indirect heat.
  • Cook for about 20 minutes, or until the potatoes are fork tender. Let cool for 5 minutes before opening.
