Foil Packet Sweet Potato Beef Bowls

Sweet potato beef bowls in foil packets—an easy, high-protein camping meal that’s hearty, customizable, and perfect for grilling or campfire cooking.

Ingredients
  

  • 1 lb lean ground beef browned, drained and seasoned with taco seasoning
  • 4 medium sweet potatoes
  • 1 avocado ripe
  • 250 ml tub 2% cottage cheese
  • Pickled red onion garnish

Instructions
 

  • Wrap each sweet potato in aluminum foil, creating a packet using 12-inch square sheets. Seal tightly so juices stay inside while cooking.
  • Preheat a grill to medium-high (around 400°F), leaving one section for indirect heat. Place foil packs over indirect heat or coals and cook for about 30 minutes, until fork tender.
  • Carefully open the packet, slice the potato open, and top with cooked beef. Wrap back up briefly if the beef needs to be reheated.
  • Cut open the avocado, remove the pit, and mash with a fork.
  • Add about ¼ avocado to each potato, a generous scoop of cottage cheese, and pickled red onions.
  • Grab a fork and enjoy прямо out of the foil packet.
