Fully Loaded Grilled Potato Slices

These fully loaded grilled potato slices make a delicious side dish when camping! Add this easy potato recipe to your meal planning.

Ingredients
  

  • 1 lb medium potatoes sliced
  • 6 bacon slices
  • 1 cup cheddar cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1 Tbsp olive oil
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 1 green onion stalk diced
  • 2-3 tbsp fresh dill

Instructions
 

  • Slice and season the potatoes with olive oil and spices.
  • Line a BBQ grill with aluminum foil and place the potatoes on top. Alternately use a flat cast iron griddle.
  • Cook the potatoes on medium high for 10-15 minutes or until a fork inserted comes out smooth.
  • Meanwhile, fry up the bacon in a skillet until it reaches your desired doneness.
  • Chop up the fresh herbs.
  • Top potato slices with cheese, bacon, and herbs and allow to cook for another 5 minutes or until the cheese is melted.
