Salsa Chicken Foil Packs

Sizzle up your camping trip with easy salsa chicken foil packs — seasoned chicken, cheese, and salsa wrapped in foil for a delicious fireside feast!

- 4 boneless skinless chicken breasts cut into strips
- 1 medium zucchini sliced
- 1 medium red bell pepper sliced
- 1 medium green or yellow bell pepper sliced
- 1 Tbsp olive oil
- 1 cup salsa
- 1 cup Tex Mex cheese shredded
- 2 green onion stalks diced
- 1 jalapeno pepper sliced, optional
- Sour cream optional
- Lime wedges optional, for garnish
Preheat the BBQ grill to 400 degrees F.
Cut up the vegetables and slice the chicken.
Divide the ingredients equally onto four sheets of foil (about 12” long).
Top with salsa and cheese.
Fold aluminum foil into a packet.
Place packs directly onto the grill grate.
Cook for 20-25 minutes or until the chicken is completely cooked.
Garnish with green onions, sour cream, a squeeze of fresh lime juice, and jalapeno if desired.
- When planning for camping, we like to do as much prep as possible at home, while we have access to hot running water. It makes cleanup so much easier.
- Place foil packs on a baking sheet if you are worried about the packet leaking on the grill.
- Use sheets of heavy-duty foil or double wrap your packet if you are worried out breakage.
- Open these chicken foil packets carefully as they will be hot!
- Give each square of foil a light coating of nonstick cooking spray to help prevent your ingredients from sticking.
- Be sure to cut your chicken breasts into evenly sized pieces for even cooking.
- Any leftovers can be stored in an airtight container in the fridge or cooler.
