Salsa Chicken Foil Packs

Sizzle up your camping trip with easy Salsa Chicken Foil Packs - seasoned chicken, cheese and salsa wrapped in foil for a delicious fireside feast!

Ingredients
  

  • 4 boneless skinless chicken breasts cut into strips
  • 1 medium zucchini sliced
  • 1 medium red bell pepper sliced
  • 1 medium green or yellow bell pepper sliced
  • 1 Tbsp olive oil
  • 1 cup salsa
  • 1 cup Tex Mex cheese shredded
  • 2 green onion stalks diced
  • 1 jalapeno pepper sliced, optional
  • Sour cream optional
  • Lime wedges optional, for garnish

Instructions
 

  • Preheat the BBQ grill to 400 degrees F.
  • Cut up the vegetables and slice the chicken.
  • Divide the ingredients equally onto four sheets of foil (about 12” long).
  • Top with salsa and cheese.
  • Fold aluminum foil into a packet.
  • Place packs directly onto the grill grate.
  • Cook for 20-25 minutes or until the chicken is completely cooked.
  • Garnish with green onions, sour cream, a squeeze of fresh lime juice and jalapeno if desired.
