One of our favorite things to do in the spring is to plan all of our summer trips. That often includes adding these salsa chicken packets to our menu planning.

Of course, foil pack meals are great any time of year, but they make an especially awesome campfire dinner. And they are so simple to create!

When it comes to meal planning for our camping trips, we like to be sure that we take everyone into consideration. We want all of our family members to enjoy the meals we are having, but we also want to keep the prep and cleaning up to a minimum.

Tin foil dinners are perfect for this. That is why we always keep several of our favorite foil packet meals in regular rotation on our camping menu.

Salsa Chicken Foil Packets

In our opinion, foil pack dinners are the easiest way to make a meal after a long day of exploring. Our family especially loves them because these easy recipes are so accommodating to each individual’s preferences. Not to mention, when cooking in the great outdoors, any meal with quick clean up is always a win.

These salsa chicken foil packs are a family favorite and have become a camping staple. Juicy chicken, vibrant salsa, fresh veggies, and cheese are wrapped in foil and baked to mouth-watering perfection. We highly recommend you add this recipe to your camping menu now!

How to Fold a Foil Packet

  • For best results, start by pulling the sides of the foil up to meet in the center.
  • Fold the two edges together tightly along the entire length. A 2-inch fold is ideal.
  • Finally, seal edges by rolling up the ends of each piece of tin foil to create a packet.

Ingredients

  • Boneless skinless chicken breasts, cut into strips
  • Medium zucchini, sliced
  • Red bell pepper, sliced
  • Green or yellow bell pepper, sliced
  • Olive oil
  • Salsa – we prefer a chunky salsa, but use whatever your family likes best.
  • Tex Mex cheese, shredded
  • Green onion stalks, diced
  • Jalapeno pepper, sliced, optional
  • Sour cream, optional
  • Lime wedges, optional, for garnish

Instructions

1. Preheat the BBQ grill to 400 degrees F.

2. Cut up the vegetables and slice the chicken.

Tip: you can throw everything into a medium bowl and toss with oil or avoid the extra clean up and just drizzle with oil on the foil sheet.

3. Divide the ingredients equally onto four sheets of foil (about 12” long).

4. Top with salsa and cheese.

5. Fold aluminum foil into a packet.

6. Place packs directly onto the grill grate.

7. Cook for 20-25 minutes or until the chicken is completely cooked.

8. Garnish with green onions, sour cream, a squeeze of fresh lime juice and jalapeno if desired.

Tip: Use a meat thermometer inserted into the center of thickest part of the meat to confirm the chicken is done. The internal temperature should reach 165 F.

Substitutions and Add-ins

  • Instead of using boneless skinless chicken breasts, try other cuts of chicken.
  • Add whatever fresh vegetables you have on hand.
  • Black beans
  • Red onion
  • Substitute sour cream with Greek yogurt.
  • Include more seasonings, like garlic powder, onion powder, salt, or black pepper. Chili powder or taco seasoning are also good for more authentic Mexican recipes.

Tips and Tricks

  • When planning for camping, I like to do as much prep as possible at home, while I have access to hot running water. It makes clean up so much easier.
  • Place foil packs on a baking sheet if you are worried about the packet leaking on the grill.
  • Use sheets of heavy-duty foil or double wrap your packet if you are worried out breakage.
  • Open these chicken foil packets carefully as they will be hot!
  • Give each square of foil a light coating of nonstick cooking spray to help prevent your ingredients from sticking.
  • Be sure to cut your chicken breasts into evenly sized pieces for even cooking.
  • Any leftovers can be stored in an airtight container in the fridge or cooler.
