When it comes to meal planning for our camping trips, we like to be sure that we are making choices that all of our family members are going to enjoy.

We also want to keep the prep and cleaning up to a minimum. Tin foil dinners meet this criteria.

This is why we always keep several of our favorite foil packet meals in regular rotation on our camping menu.

One of our favorite things to do in the spring is to plan all of our summer trips and that often includes adding these teriyaki chicken foil packets to our menu planning. Of course, foil pack meals are great any time of year, but they are especially awesome for grilling season and make the perfect easy campfire dinner.

In our opinion, foil pack meals are the simplest way to make an all-in-one complete meal after a long day of exploring or lounging by the water. We especially love them because these easy recipes can be customized to the likes and dislikes of each individual.

Not to mention, when cooking in the great outdoors, any meal with quick clean-up is always a win.

Teriyaki Chicken Foil Packs

These easy teriyaki chicken foil packs are quick to prep and just as quick to clean up. Simply wrap chicken, veggies, and sauce in foil, then cook to perfection!

The secret to this recipe is really the savory teriyaki sauce. All it takes is a bit of soy sauce, brown sugar, and seasonings. We highly recommend you add it to your camping menu this season!

How to Fold a Foil Packet

  • For best results, start by pulling the sides of the foil up to meet in the center.
  • Fold the two edges together tightly along the entire length. A 2-inch fold is ideal.
  • Finally, seal edges by rolling up the ends of each piece of tin foil to create a packet.

Ingredients

  • Boneless skinless chicken breasts, cut into strips
  • Head of broccoli – about 2 cups of florets
  • Bell peppers, cubed – use green, yellow, orange, or red bell pepper. You can also use a combination of colors.
  • White onion, diced
  • Teriyaki sauce, divided
  • Green onion stalks, diced, optional
  • Sesame seeds, optional

Instructions

1. Preheat the BBQ grill to 400 degrees F.

2. Cut up the vegetables and slice the chicken.

Tip: at this point you can add everything to a large bowl and coat with 1 cup teriyaki sauce, but I often skip this step and just assemble.

3. Divide the ingredients equally onto four sheets of foil (about 12” long).

4. Top with half of the teriyaki sauce.

5. Fold each sheet of foil into a packet.

6. Place the foil packets directly onto the grill grate.

7. Cook for 20-25 minutes or until the chicken is completely cooked.

8. Top with remaining cup of teriyaki sauce.

9. Garnish with green onions and sesame seeds.

Substitutions and Add-ins

  • Instead of using boneless skinless chicken breasts, try other cuts of chicken.
  • Add whatever fresh vegetables you have on hand.
  • Pineapple chunks
  • Sweet potatoes
  • Add green beans or a cup of broccoli to the recipe.
  • Red onion
  • Sugar snap peas
  • Soy sauce may be used in addition to teriyaki sauce, but I would not recommend replacing it entirely. Soy sauce doesn’t thicken and coat the ingredients in the same way.
  • Include more seasonings, like garlic powder, onion powder, or black pepper.

Tips and Tricks

  • When planning for camping, I like to do as much prep as possible at home, while I have access to hot running water. It makes clean up so much easier.
  • Place foil packs on a baking sheet if you are worried about the packet leaking on the grill.
  • Use sheets of heavy-duty foil or double wrap your packet if you are worried out breakage.
  • Open packets carefully. They release quite a bit of hot steam.
  • Give each square of foil a light coating of non-stick cooking spray to help prevent your ingredients from sticking.
  • Be sure to cut your chicken breasts into evenly sized pieces for even cooking.
  • Any leftovers can be stored in an airtight container in the fridge or cooler.
