Skillet Blackened Chicken

- 3 boneless skinless chicken breasts
- 2 Tbsp extra virgin olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp chili pepper
- 1 Tbsp lime juice
- 2 Tbsp cilantro chopped
- Lime wedges garnish
Pat the chicken breasts dry with paper towels.
Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and use a meat mallet to pound to an even thickness.
In a small bowl, combine 1 Tbsp of the oil and spices.
Coat both sides of the chicken breasts with the spice mixture.
Add the remaining oil to a large skillet.
Heat over medium until the oil starts to sizzle.
Place chicken cutlets in the hot skillet and cook until browned, about 5 minutes.
Flip and cook for an additional 3-5 minutes.
Top with fresh lime juice and cilantro.
- We like to make our own blackening seasoning, but you can also find it premixed at the grocery store (it's often called Cajun seasoning). We carry a jar of this spicy seasoning in the trailer all summer.
- Try this easy recipe with boneless skinless chicken thighs or chicken tenders instead of chicken breasts.
- When planning for camping, we like to do as much meal prep as possible before we leave. Having easy access to hot running water makes cleanup much easier.
- Make your seasoning mix at home and save yourself from packing so many different containers.
- To be sure your chicken is fully cooked, check the internal temperature using a meat thermometer inserted into the thickest part of the meat.
- Store any leftover chicken in the fridge or cooler in an airtight container.
