When we put together a camping menu, we look for recipes that we can put together quickly and that use just a few ingredients. We don’t want to spend so much time cooking that we miss out on all the fun of camping!

The recipe we are sharing with you today fits all the criteria for a great camp meal – quick, simple, and delicious. This easy blackened chicken recipe gets its name for the way the blend of spices creates a dark crust on the meat during the cooking process.

Leftover blackened chicken can be used in a variety of dishes, such as tacos, sandwiches, or even pasta salad.

This is a great recipe to make at home for an easy weeknight dinner, but it is a great addition to your camping menu as well. Because it is our go-to for tons of meal and snack recipes, we always have a large cast iron skillet in our camp kitchen.

The chicken breasts are nice and thin, so cooking time will be faster and there will be less chance of undercooking the meat too, especially when cooking over the fire.

Tips for cooking with cast iron

  • When cooking with cast iron, be sure to season the surface first.
  • Always use gloves or oven mitts while cooking as the surface of the iron will be hot.
  • Cook the recipe over an open fire using hot coals, not open flames.  A fire that is too hot will burn the outside of your recipe and not cook the inside. Learn how to make a campfire for cooking.
  • Be sure to clean the cast iron with a rough vegetable scrubber, rinse and dry thoroughly before storing.

  • Cut the chicken into bite-sized pieces before cooking.
  • Use the blackening seasoning on chicken wings or fish.
  • Up the heat level of your spice blend by using cayenne pepper in place of some or all of the chili powder.

Tips and Tricks

  • Try this easy recipe with boneless skinless chicken thighs or chicken tenders instead of chicken breasts.
  • When planning for camping, I like to do as much meal prep as possible before we leave. Having easy access to hot running water makes clean up much easier.
  • Make your seasoning mix at home and save yourself from packing so many different containers.
  • Be sure your chicken is fully cooked, check the internal temperature using a meat thermometer inserted into the thickest part of the meat.
  • Store any leftover chicken in the fridge or cooler in an airtight container.

Ingredients

  • Boneless, skinless chicken breasts
  • Extra virgin olive oil
  • Paprika
  • Garlic powder
  • Cumin
  • Salt and black pepper
  • Chili pepper
  • Fresh lime juice
  • Fresh cilantro, chopped
  • Lime wedges, garnish

*we like to make our own blackening seasoning but you can also find it premixed at the grocery store, its often called Cajun seasoning. We carry a jar of this spicy seasoning in the trailer all summer.

Instructions

1. Pat the chicken breasts dry with paper towels.

2. Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and use a meat mallet to pound to an even thickness.

3. In a small bowl, combine 1 Tbsp of the oil and spices.

4. Coat both sides of the chicken breasts with the spice mixture.

5. Add the remaining oil to a large skillet.

6. Heat over medium until the oil starts to sizzle.

7. Place chicken cutlets in the hot skillet and cook until browned, about 5 minutes.

8. Flip and cook for an additional 3-5 minutes.

9. Top with fresh lime juice and cilantro.
