The Best Skillet Quesadilla Recipe

Crispy, cheesy skillet quesadillas made right at the campsite! This easy camping recipe is kid-approved, customizable, and perfect for hungry outdoor adventures.

Ingredients
  

  • 4 chicken breasts sliced
  • 2 tsp seasoning
  • 2 bell peppers sliced
  • 1/2 white onion sliced
  • 8 large tortillas
  • 2 cups cheddar cheese shredded
  • 1 Tbsp olive oil
  • Sour cream
  • Salsa

Instructions
 

  • Prepare and package the vegetables and chicken at home if possible.
  • Coat the skillet in olive oil and add the chicken.
  • Cook over the grill or fire for ten minutes or until chicken is opaque.
  • Add vegetables and cook until al dente (about 10 minutes).
  • Next layer 1/2 cup of the filling mixture and 1/4 cup shredded cheese between two large tortillas and heat until the tortilla is toasted and the cheese is melted.
  • Slice the quesadilla into wedges.
  • Serve with fresh salsa and sour cream.
