  • Diced hash browns – Crispy-on-the-edges potatoes that make this feel extra filling.
  • Bell pepper, diced – Adds a pop of color and just enough sweetness to balance the savory sausage.
  • White onion, diced – Brings classic breakfast flavor and smells amazing while cooking over the fire.
  • Cheese, shredded – Melty, gooey, and absolutely non-negotiable when feeding a campsite crowd.

Instructions

1. Combine eggs, pepper, onion, cooked sausage, and cheese.

Tip: Do this prep work at home and pack into a large freezer bag to use while camping.

2. Layer hash browns on the base of a foil packet or pie plate. Pour egg mixture overtop. Wrap the entire packet in foil.

3. Bake over the coals of a fire or in an oven at 350 degrees for 45 minutes or until the egg is set.
