How to Make Skillet Stuffed Peppers

Ingredients
- Olive oil – Helps everything cook evenly while adding rich flavor to the skillet.
- Garlic, minced (optional) – Adds bold flavor and makes the whole campsite smell amazing.
- Onion, minced (optional) – Brings a savory, slightly sweet base to the filling.
- Ground pork or sausage – A hearty protein that keeps everyone full.
- Canned tomatoes, juice included – Creates a juicy, flavorful filling that won’t dry out.
- Zucchini, diced – Sneaks in veggies without triggering the “what’s this green stuff?” reaction.
- Tomato paste – Thickens the mixture and adds deep tomato flavor.
- Salt – Enhances all the flavors in the skillet.
- Black pepper – Adds just enough bite without heat.
- Italian seasoning – Gives the dish that classic, cozy comfort-food flavor.
- Rice, prepared – Makes the filling hearty and satisfying.
- Sweet bell peppers – The perfect edible containers for all that delicious stuffing.
- Shredded cheddar cheese – Melts into gooey perfection and seals the deal.
Pro tip: Prepare as much of this dish as you can at home, before going camping. We like to have the rice already cooked and stored in a freezer bag.
You could also cook up the sausage beforehand and simply mix and reheat the ingredients while camping. This makes preparing this delicious meal while camping even easier!

Instructions
1. Place the olive oil in a large skillet over medium heat.
2. Once hot, add the onion, garlic, and ground sausage. Cook until the sausage is well-browned, about 8-10 minutes.

3. Add the canned tomatoes, tomato paste, diced zucchini, and seasoning. Stir until well combined.

4. Stir in the rice and cook until tomato juice is mostly absorbed.

5. Cut the tops off of the sweet bell peppers and remove the insides.

6. Scoop the sausage and rice mixture into the peppers.
7. Wrap the skillet in foil and place in the hot coals of the fire to bake for 30 minutes or place bell peppers in a small casserole dish, cover, and bake for 30 minutes in the oven at 400 degrees F.

8. Remove the tinfoil and then sprinkle cheese over peppers. Continue baking for 10-15 minutes, until cheese is completely melted.
Tip: A grill or oven-safe dish works to make this recipe as well. You could even wrap the peppers in aluminum foil, creating a foil packet meal that would be delicious!

This recipe makes six servings and can easily be doubled for a larger crowd. Serve with sour cream and fresh parsley.
