- Eggs – The protein-packed base that holds everything together in one hearty, sliceable breakfast bake.
- Diced hash browns – Crispy-on-the-edges potatoes that make this feel extra filling.
- Bell pepper, diced – Adds a pop of color and just enough sweetness to balance the savory sausage.
- White onion, diced – Brings classic breakfast flavor and smells amazing while cooking over the fire.
- Cheese, shredded – Melty, gooey, and absolutely non-negotiable when feeding a campsite crowd.
- Green onion stalk, diced – A fresh finishing touch that makes this foil packet breakfast bake feel fancy.

Instructions
1. Combine eggs, pepper, onion, cooked sausage, and cheese.
Tip: Do this prep work at home and pack into a large freezer bag to use while camping.

2. Layer hash browns on the base of a foil packet or pie plate. Pour egg mixture overtop. Wrap the entire packet in foil.
3. Bake over the coals of a fire or in an oven at 350 degrees for 45 minutes or until the egg is set.
4. Serve with green onion.

- Cut two pieces of aluminum foil to about 12″. Layer them one on top of the other. Place recipe ingredients in the center. Bring up the longer edges of the foil and fold together. Grasp one end and roll it up, then repeat with the other end.
- Alternatively, foil pie plates may be used to cook foil packet meals. Simply place the recipe ingredients in the pie plate and cover with aluminum foil before cooking.
- For best results, cook the foil packet on a grill over the open fire.
- Use caution when handling the foil packet, as it can become hot while cooking.
