How to Make This Pie Iron Breakfast Bake
Ingredients
- Tatertot hashbrowns – Crispy on the outside and soft inside, these create the perfect potato base for a hearty campfire breakfast.
- Eggs – Simple, filling, and protein-packed, eggs turn this easy recipe into a satisfying morning meal.
- Shredded cheese – Melty, gooey cheese adds big flavor and makes this breakfast bake totally irresistible to kids and adults alike.

Instructions
1. Oil the inside of the pie iron with butter or olive oil. This isn’t needed if your pie iron is well seasoned and non-stick.

2. Layer tatertots, an egg, and top with shredded cheese.

3. Close the pie iron and bake over the coals of a campfire for 10 minutes, flipping halfway through.

The tatertots make the perfect potato base for this dish and we often add bacon or ham.
You can also use a variety of cheese. The kids love processed Kraft cheese slices the best.

Are the eggs raw when you put them in the pie iron? Raw eggs stick so badly.
Yes they are, we grease the iron well so they do not stick.
Do you just allow the tater tots to thaw in the cooler or do you keep them frozen somehow?
I allow them to thaw when left in the cooler, they don’t hold their shape as well but still taste yummy. If they are in the RV freezer I cook from frozen.
