Fish has become a staple in our diet as we have all picked up an avid interest in fishing! Most of our fish recipes are made using fresh fish that we have caught.

Ingredients

  • Salmon steaks – Thick, meaty salmon steaks hold up beautifully on the grill and stay tender and flaky when cooked just right.
  • Bourbon (or dark alcohol of choice) – Adds a rich, smoky depth to the marinade that pairs perfectly with grilled salmon (don’t worry, it cooks off!).
  • Brown sugar – Brings a touch of sweetness that balances the bourbon and helps create that irresistible caramelized exterior.
  • Garlic cloves, minced – Fresh minced garlic adds bold flavor and balances the sweetness of the marinade.
  • Orange juice – A splash of citrus brightens the dish and helps tenderize the salmon while adding a fresh summer flavor.
  • Parsley, for garnish – A simple, fresh garnish that adds color and a pop of freshness.

Instructions

1. Rinse and pat the salmon steaks dry with paper towel.

2. Mix together bourbon and brown sugar in a large baking dish.

3. Place steaks in the dish and use a spoon to cover each one with the marinade mixture.

    4. Sprinkle fresh garlic over the steaks and squeeze the juice from half of an orange over top.

    5. Refrigerate for at least two hours.

    6. Heat the grill to 400 degrees F.

    7. Cook the steaks for 5 minutes on each side.

    8. Top with fresh parsley and serve.

    We love this paired with grilled vegetables, like fresh green beans or asparagus topped with cheese sauce. I (Heather) am a salmon-loving convert after tasting this yummy recipe for the first time and now we have it once a week at least.

    We’ve also experimented with a few variations and used Swerve brown sugar sweetener for a low carb version of this dish.

    • 6 salmon steaks 1.5″ thick
    • 1 1/4 cup bourbon
    • 1 cup brown sugar
    • 2 cloves of garlic minced
    • 1/2 orange juiced
    • Parsley for garnish
