- Olive oil – Helps the potatoes cook evenly and keeps them from sticking while adding a touch of richness.
- Paprika – A little smoky warmth that gives the potatoes color and just enough kick.

- Green onion stalk, diced – Adds a fresh pop of color and mild onion flavor that cuts through the richness.

Instructions
1. Slice and season the potatoes with olive oil and spices.
2. Line a BBQ grill with aluminum foil and place the potatoes on top. Alternately use a flat cast iron griddle.

3. Cook the potatoes on medium high for 10-15 minutes or until a fork inserted comes out smooth.
4. Meanwhile, fry up the bacon in a skillet until it reaches your desired doneness.

5. Chop up fresh herbs.

6. Top potato slices with cheese, bacon, and herbs and allow to cook for another 5 minutes or until the cheese is melted.
