Grilled Potato Slices
Ingredients
- 1 lb medium potatoes, sliced
- 6 bacon slices
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 Tbsp olive oil
- 1/2 tsp paprika
- Salt & pepper, to taste
- 1 green onion stalk, diced
- 2-3 tbsp fresh dill
Directions
1. Slice and season the potatoes with olive oil and spices.
2. Line a BBQ grill with aluminum foil and place the potatoes on top. Alternately use a flat cast iron griddle.
3. Cook the potatoes on medium high for 10-15 minutes or until a fork inserted comes out smooth.
4. Meanwhile, fry up the bacon in a skillet until it reaches your desired doneness.
5. Chop up fresh herbs.
6. Top potato slices with cheese, bacon and herbs and allow to cook for another 5 minutes or until the cheese is melted.
