How to Make This Cheesy Skillet Cauliflower Bake

Ingredients
- Cauliflower, chopped – Cauliflower becomes tender and soaks up all that cheesy, bacony goodness like a champ.
- Bacon – Crispy bacon adds extra protein and smoky flavor.
- Onion, diced – It brings just the right amount of savory sweetness to balance the richness of the cheese.
- Salt and pepper, to taste – These simple seasonings make the other flavors pop without stealing the spotlight.
- Whole milk – Whole milk creates an extra creamy base.
- Cornstarch – This thickener works to make the sauce smooth and luscious.
- Cheddar cheese, shredded – Shredded cheddar melts into gooey perfection and delivers that classic cheesy flavor we all love.
- Parmesan cheese, shredded – Parmesan adds a salty, slightly nutty kick that takes the cheese factor up a notch.
Pro Tip: Prepare as much of this dish at home, before going camping. We like to have the cauliflower already washed, chopped, and stored in a freezer bag.
You could also cook up the bacon beforehand and simply mix and reheat the ingredients while camping. This makes preparing your meal even easier!

Instructions
1. In a skillet over medium heat, cook the chopped bacon to your desired preference.
2. Remove the bacon to a paper towel-lined plate and set aside.

3. Add the diced onions and cauliflower to the hot skillet and cook for 4-5 minutes, until onions are translucent and cauliflower browned.
4. Stir occasionally.

5. In a medium bowl, whisk together cornstarch and milk.
6. Stir the milk mixture into the cauliflower.
7. Heat for 2 minutes, stirring occasionally.

8. Sprinkle both cheeses and the bacon onto the cauliflower.

9. Cover in tinfoil and place in the campfire coals for 8-10 minutes or put into a 350 degree F oven and bake for 8-10 minutes.
10. Bake until cheeses are melted.
11. Serve warm.

A frying pan or oven-safe dish works to make this recipe as well. You could even wrap the cauliflower in aluminum foil, creating a foil packet meal that would be delicious!

This recipe makes four servings and can easily be doubled for a larger crowd. Serve with sour cream and fresh parsley.

I made this and it was good. It needs salt and pepper and/or other seasoning.
Also, the Ingredients list needs to be updated to show bacon and onions. Fortunately, I read the entire recipe before I packed for our camp-out, so we had bacon and onions available, although I had to guess at the amount.
