Creamy Tuscan Chicken Skillet

When we put together a camping menu, we look for recipes with a short cook time and simple ingredients. After a long day of hiking or hanging out at the beach, we want to be able to make a quick and delicious meal that everyone will eat.

We don’t want to spend so much time cooking that we miss out on all the fun of camping!

Today’s Tuscan chicken is just the kind of meal that we are talking about. Juicy chicken breasts are cooked in a creamy parmesan sauce for a decadent one-pan meal that comes together in minutes.

The first time that we tried it, we knew it was going to be a new family favorite.

Tuscan Chicken Recipe

While you can cook up this amazing recipe at home on the stove top, it is an ideal addition to your camping menu. We always have a large cast iron skillet in our camp kitchen, because we use it for so many recipes.

Using thin chicken breasts means that the cooking time will be faster, too, and there will be less chance of accidentally undercooking the meat, especially when cooking over the fire.

We like to serve this creamy parmesan Tuscan chicken over pasta or we use cauliflower rice as a low carb option. If you are feeling ambitious, you could add a side salad.

To save on camp cleanup, we sometimes just have a loaf of crusty bread with it. The bread soaks up all that sauce so nicely.

And we get to enjoy a restaurant quality chicken dish in the great outdoors. It doesn’t get much better than that.

Tips for Cooking With Cast Iron

  • When cooking with cast iron, be sure to season the surface first.
  • Always use gloves or oven mitts while cooking, as the surface of the iron will be hot.

  • Be sure to clean the cast iron with a rough vegetable scrubber, rinse, and dry thoroughly before storing.

Ingredients

  • Boneless, skinless chicken breasts – Lean, juicy, and quick-cooking, these are the protein powerhouse that makes this skillet meal filling and family-approved.
  • Italian seasoning (or a combination of dried oregano, parsley, and basil) – A classic herb blend that instantly gives the dish that cozy, restaurant-style Tuscan flavor.
  • Salt and pepper – Simple but essential, these bring out all the savory goodness in the chicken and sauce.
  • Extra virgin olive oil – Adds richness and helps sear the chicken to golden perfection.
  • Garlic cloves, minced – Because garlic makes everything better.
  • Small white onion, diced – Sweet and mild, it builds flavor and gives the sauce a comforting, home-cooked base.
  • Sun-dried tomatoes, drained – Little bursts of tangy sweetness that make this dish taste fancy.
  • Fresh spinach – Wilts down beautifully and sneaks in some extra greens.
  • Cream – Heavy cream gives the best results for a luscious, velvety sauce, but you can also use lower fat cream.
  • Parmesan cheese, shredded – Salty, nutty, and melty, this is what turns the sauce into pure Tuscan magic.

Instructions

1. Pat the chicken breasts dry with a paper towel.

2. Cut each breast in half horizontally into two thinner cutlets. Alternately, place the chicken under a layer of plastic wrap and pound to an even thickness.

3. Season the chicken breast with Italian seasoning, salt, and pepper.

4. Add 1 Tbsp olive oil to a large skillet.

5. Heat over medium until the oil starts to sizzle.

6. Add the chicken breasts to the skillet and cook until browned, about 5 minutes.

7. Flip and cook for an additional 3-5 minutes.

8. Remove the cooked chicken to a tray and cover to keep warm.

9. Repeat with any remaining cutlets.

10. Add remaining oil, onion, and garlic to the skillet and sauté until fragrant, about 3 minutes.

11. Add tomatoes and spinach and cook until the spinach is wilted.

12. Add cream and cheese, cooking for 5 minutes until it starts to thicken.

13. Add chicken and plate juices back to the pan and spoon the sauce over the chicken.

14. Simmer in the cream sauce until the chicken is heated through and the sauce has reduced slightly.

Variations

  • If you like it spicy, add in some red pepper flakes.
  • While we think fresh garlic cloves are best, you could try using garlic powder instead. Adjust the amount according to your tastes.
  • Replace the sun-dried tomatoes with a handful of fresh cherry tomatoes.
  • Turn this recipe into Tuscan shrimp or Tuscan salmon.
