How to Make Bacon Wrapped Salmon

Ingredients
- Salmon fillets, approximately 3 oz each – Fresh, flaky salmon that cooks up tender and juicy in the skillet.
- Salt and pepper, to taste – Simple seasonings that enhance the natural flavor of the salmon.
- Lemon zest – Adds a bright, fresh flavor that balances the richness of the bacon.
- Bacon strips, uncooked – Wraps the salmon in crispy, salty goodness (a guaranteed crowd-pleaser).
- Maple syrup – A touch of sweetness that pairs perfectly with the smoky bacon and salmon.
Tip: Costco has the best deal on salmon and we like to buy fresh-caught Pacific salmon whenever possible. The fillets are the perfect size for cooking in a skillet, simply cut into steaks.

Instructions
1. Pat the salmon fillets dry with paper towel.
2. Season the salmon fillets with salt, pepper, and lemon zest, to taste.

3. Use two strips of bacon to wrap each salmon fillet, overlapping the strips slightly to ensure even coverage after the salmon bakes.

4. Place a skillet over medium heat.
5. Once skillet is hot, place the bacon wrapped salmon in the pan and cook 2-3 minutes, until bacon is lightly browned.

6. Flip salmon and cook 2 minutes.

7. Wrap the top of the skillet in aluminum foil and cook until the internal temperature reaches 145 degrees F or the bacon is done to your liking.
Note: Alternatively, place the skillet in an oven and broil for 3-4 minutes.
8. Drizzle the salmon with maple syrup and brush with a pastry brush to ensure even coverage.

A grill or oven-safe dish works to make this recipe as well. You could even wrap the salmon in aluminum foil, creating a foil packet meal that would be delicious!
