Tips for cooking with cast iron:
- When cooking with cast iron, be sure to season the surface first.
- Always use gloves or oven mitts while cooking, as the surface of the iron will be hot.
- Cook the recipe over an open fire using hot coals, not open flames. A fire that is too hot will burn the outside of your recipe and not cook the inside.
- Be sure to clean the cast iron with a rough vegetable scrubber, then rinse and dry thoroughly before storing.
How to make skillet breakfast sausage:
Ingredients:
- 1 1/2 lbs ground pork
- 1 teaspoon sage
- 1/2 teaspoon garlic powder
- 1 teaspoon thyme
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon nutmeg
- 2 Tablespoons maple syrup (can use brown sugar)
- 2 Tablespoons olive oil, as needed
Note: these sausages can be portioned out and frozen, uncooked, if desired. Perfect for making ahead and using on your next trip!
Directions:
1. In a medium-sized bowl, use your hands to combine the ground pork and seasoning.
2. Season with sage, thyme, garlic powder, salt, pepper and nutmeg and combine well.
3. Sweeten with maple syrup, as desired.
4. Portion out the sausage mixture in 1/4 cup portions and form into flat 1/2″ thick patties.
5. Place 1 Tablespoon of olive oil in a skillet over medium heat.
6. Cook the sausage patties, 4 at a time, in the hot oil for 3-4 minutes per side, until well browned and an inserted thermometer reaches 145F minimum.
7. Repeat with all patties, adding extra olive oil as needed.
Makes about 12 sausage patties.
These delicious pork sausage patties make a great addition to any camping meal. You could totally make this ahead for breakfast and use leftover breakfast sausage with dinner.
Tips & tricks:
- Cook up a huge batch of sausage patties to freeze for a quick breakfast anytime. Store them in an airtight container or resealable plastic bag. They will keep for up to a week.
- Try substituting a pound of ground turkey in your sausage mixture. You could also use ground beef.
- If you’re cooking this recipe at home, why not use an air fryer? You can bake them in the oven too. Line a baking sheet with parchment paper for easy cleanup.
This recipe makes twelve servings and can easily be doubled for a larger crowd. Serve with this campfire breakfast bake or camping breakfast burritos.
This simple recipe is just a starting point. Change up the seasoning blend with a few tablespoons of fresh herbs, poultry seasoning, or fennel seed. Add in red pepper flakes or cayenne pepper for a more spicy sausage. Make it just the way you like it.
