How to make skillet cauliflower bake
Ingredients:
- 4 cups cauliflower, chopped
- 4 slices of bacon
- 1/4 cup onion, diced
- Salt and pepper, to taste
- 3/4 cup whole milk
- 1-2 Tablespoons cornstarch
- 1 cup cheddar cheese, shredded
- 1/4 cup Parmesan cheese, shredded
Pro tip: Prepare as much of this dish at home, before going camping. I like to have the cauliflower already washed, chopped and stored in a freezer bag.
You could also cook up the bacon beforehand and simply mix and reheat the ingredients while camping. This makes preparing this delicious meal while camping even easier!
Directions:
In a skillet over medium heat, cook the chopped bacon to your desired preference.
Remove the bacon to a paper towel-lined plate and set aside.
Add the diced onions and cauliflower to the hot skillet and cook for 4-5 minutes, until onions are translucent and cauliflower browned.
Stir occasionally.
In a medium bowl, whisk together cornstarch and milk.
Stir the milk mixture into the cauliflower.
Heat for 2 minutes, stirring occasionally.
Sprinkle both cheeses and the bacon onto the cauliflower.
Cover in tinfoil and place in the campfire coals for 8-10 minutes or put into a 350 degree F oven and bake for 8-10 minutes.
Bake until cheeses are melted.
Serve warm.
A frying pan or oven safe dish works to make this recipe as well. You could even wrap the cauliflower in aluminum foil, creating a foil packet meal that would be delicious!
This recipe makes four servings and can easily be doubled for a larger crowd. Serve with sour cream and fresh parsley.
