This basic recipe is a great place to start. You can easily customize it to fit your family’s tastes. With fresh ingredients and a fry pan, you’ll whip up this easy recipe in no time! Give it a try on your next camping trip.

Each breakfast in a bag serves one person and can be stored in a plastic bag or mason jar to use later when camping.

Ingredients

  • Large eggs
  • Cheddar cheese, shredded
  • Summer sausage, diced
  • White mushrooms, diced
  • Green onion stalk, diced

Directions

1. In a medium bowl, combine eggs, cheddar cheese, sausage, mushrooms and onion.

2. Heat olive oil in a cast iron skillet on the camp stove or over the open fire.

3. Pour the egg mixture into the skillet and cook on medium, stirring frequently for 8-10 minutes or until cooked through.

4. Serve warm.

Optional add-ins

  • Chopped onions
  • Hash browns or diced potatoes 
  • Use breakfast sausage broken into small pieces in place of summer sausage. 
  • Any omelet ingredients your family likes!

Alternate ways to cook

  • You can cook several individual bag omelets at once in boiling water. Set up an omelet bar for everyone to choose their own add-ins. Use freezer bags or silicone bags and a large pot for this cooking method.
  • Foil packs can also be used. Try a disposable pie plate or cake pan covered with aluminium foil to prevent leakage.

Easy camping breakfast ideas

  • Try a campfire breakfast burger. Fill your burger with a fried egg, sausage patty, or both. English muffins or sweet Hawaiian rolls make a nice change from a typical burger bun.
  • Make-ahead breakfast sandwiches also work well.
  • Skillet french toast and fresh fruit. Don’t forget the maple syrup!
  • Overnight oats make for a simple camping breakfast. They can be prepped before you leave home and eaten cold, saving on cook time. Serve with brown sugar for a little added sweetness.
  • Cinnamon rolls are another one of my favourite things for a delicious breakfast. Baking them over hot coals in an empty orange peel half adds great flavour. 
  • Banana bread pancakes are a delicious way to enjoy breakfast. Spread on some peanut butter for a classic flavour combo. You can combine all the dry ingredients at home in a Ziploc bag or a plastic container to take with you. It’s a good idea to write the instruction steps on the bag, so you don’t forget anything! Using pancake mix as a base cuts down on prep time too. 
  • Breakfast burritos. After preparing your Breakfast in a Bag, wrap your cooked egg mixture up in a flour tortilla for an easy breakfast burrito.

Tips for cooking with cast iron

  • When cooking with cast iron, be sure to season the surface first.
  • Always use gloves or oven mitts while cooking as the surface of the iron will be hot.
  • Cook the recipe over an open fire using hot coals, not open flames.  A fire that is too hot will burn the outside of your recipe and not cook the inside. Learn how to make a campfire for cooking.
  • Be sure to clean the cast iron with a rough vegetable scrubber, rinse and dry thoroughly before storing.
