How to make this skillet quesadilla recipe:
Ingredients:
- 4 chicken breasts, sliced
- 2 tsp seasoning
- 2 bell peppers, sliced
- 1/2 white onion, sliced
- 8 large tortillas
- 2 cups cheddar cheese, shredded
- 1 Tbsp olive oil
- Sour cream
- Salsa
1. Prepare and package the vegetables and chicken at home if possible.
2. Coat the skillet in olive oil and add the chicken.
3. Cook over the grill or fire for ten minutes or until chicken is opaque. Check out our “How to Build a Campfire for Cooking” post for more tips and tricks!
4. Add vegetables and cook until al dente (about 10 mins).
5. Next layer 1/2 cup of the filling mixture and 1/4 cup shredded cheese between two large tortillas and heat until the tortilla is toasted and the cheese is melted. We like to use two skillets for this set, one for toasting the quesadillas and one for keeping the filling warm and acting as a “press” for the tortillas. Here the quesadilla is on one skillet while the other skillet, with the filling, is being used to cook and press the quesadilla together.
This gives the tortillas a nice crispy finish on both sides.
6. Slice the quesadilla into wedges.
7. Serve with fresh salsa and sour cream.

This is such a great make ahead camping meal that the whole family loves. I like that you can totally customize the filling to your liking. And it’s easy to make in a pie iron or foil packet too!
Camping meal preparation hacks:
- Prepare meals in advance at home whenever possible. Leave most of the mess at home where running water is more accessible and clean up is easier. Trust me on this one!
- Create “one pot” family style meals for quick dinners that don’t require a lot of thought.
- Use tinfoil packets, foil pie pans or pie irons. These tools help to make clean up a breeze!
- Pack ingredients in 1 gallon size ziploc bags for flexible storage in small fridges and coolers.
- Plan meals that use similar ingredients to help make packing and planning easy. These Cheesy Vegetable Campfire Dip, Loaded Campfire Potatoes and Tinfoil Packet Taco Salad recipes are some of my favorites.
