How to Make This Skillet Quesadilla Recipe
Ingredients
- Chicken breasts, sliced – Tender chicken breasts make a hearty, protein-packed filling that cooks up perfectly in a cast iron skillet.
- Seasoning – Use your favorite fajita or taco seasoning for big flavor with minimal effort.
- Bell peppers, sliced – They add crunch, sweetness, and a pop of veggie goodness.
- White onion, sliced – Onion brings savory flavor and softens perfectly as it cooks.
- Tortillas – Large tortillas hold all the cheesy filling and crisp up beautifully in the skillet.
- Cheddar cheese, shredded – Melty, gooey cheese holds the quesadilla together.
- Olive oil – Helps prevent sticking and gives everything a nice golden finish.
- Sour cream – Cool and creamy, perfect for topping or dipping.
- Salsa – Fresh and flavorful, adding the perfect finishing touch.

1. Prepare and package the vegetables and chicken at home if possible.

2. Coat the skillet in olive oil and add the chicken.

3. Cook over the grill or fire for ten minutes or until chicken is opaque. Check out our How to Build a Campfire for Cooking post for more tips and tricks!

4. Add vegetables and cook until al dente (about 10 minutes).

5. Next layer 1/2 cup of the filling mixture and 1/4 cup shredded cheese between two large tortillas and heat until the tortilla is toasted and the cheese is melted. We like to use two skillets for this step, one for toasting the quesadillas and one for keeping the filling warm and acting as a “press” for the tortillas.

Here the quesadilla is on one skillet while the other skillet, with the filling, is being used to cook and press the quesadilla together.

This gives the tortillas a nice crispy finish on both sides.

6. Slice the quesadilla into wedges.

7. Serve with fresh salsa and sour cream.
