Salsa Chicken Foil Packets
In our opinion, foil pack dinners are the easiest way to make a meal after a long day of exploring. Our family especially loves them because these easy recipes are so accommodating to each individual’s preferences.

These salsa chicken foil packs are a family favorite and have become a camping staple. Juicy chicken, vibrant salsa, fresh veggies, and cheese are wrapped in foil and baked to mouth-watering perfection.

How to Fold a Foil Packet
- For best results, start by pulling the sides of the foil up to meet in the center.
- Fold the two edges together tightly along the entire length. A 2-inch fold is ideal.
- Finally, seal edges by rolling up the ends of each piece of tin foil to create a packet.

Ingredients
- Boneless skinless chicken breasts, cut into strips – Lean, tender chicken cooks up juicy and soaks up all that salsa goodness.
- Medium zucchini, sliced – A mild, tender veggie that adds freshness and cooks perfectly soft inside the foil.
- Red bell pepper, sliced – Sweet and colorful, this pepper brings crunch and a pop of flavor to every bite.
- Green or yellow bell pepper, sliced – Slightly crisp with a subtle sweetness that balances the savory chicken and cheese.
- Olive oil – Just enough to keep everything juicy and prevent sticking.
- Salsa – Adds spice, tang, and moisture all in one easy scoop. We prefer a chunky salsa, but use whatever your family likes best.
- Tex Mex cheese, shredded – Melty, cheesy perfection that pulls the whole foil pack together.
- Green onion stalks, diced – A fresh, mild onion flavor sprinkled on top for a little crunch and color.
- Jalapeno pepper, sliced (optional) – For those family members who like a little heat.
- Sour cream (optional) – Cool and creamy, perfect for taming the spice and adding richness.
- Lime wedges, for garnish (optional) – A final squeeze of citrus that brightens everything up and makes the flavors pop.

Instructions
1. Preheat the BBQ grill to 400 degrees F.
2. Cut up the vegetables and slice the chicken.
Tip: You can throw everything into a medium bowl and toss with oil or avoid the extra cleanup and just drizzle with oil on the foil sheet.
3. Divide the ingredients equally onto four sheets of foil (about 12” long).
4. Top with salsa and cheese.

5. Fold aluminum foil into a packet.
6. Place packs directly onto the grill grate.
7. Cook for 20-25 minutes or until the chicken is completely cooked.
8. Garnish with green onions, sour cream, a squeeze of fresh lime juice, and jalapeno if desired.
Tip: Use a meat thermometer inserted into the center or thickest part of the meat to confirm the chicken is done. The internal temperature should reach 165 F.

Substitutions and Add-ins
- Instead of using boneless skinless chicken breasts, try other cuts of chicken.
- Add whatever fresh vegetables you have on hand.

- Substitute sour cream with Greek yogurt.

- When planning for camping, we like to do as much prep as possible at home, while we have access to hot running water. It makes cleanup so much easier.
- Place foil packs on a baking sheet if you are worried about the packet leaking on the grill.
- Use sheets of heavy-duty foil or double wrap your packet if you are worried out breakage.
- Open these chicken foil packets carefully as they will be hot!
- Give each square of foil a light coating of nonstick cooking spray to help prevent your ingredients from sticking.
- Be sure to cut your chicken breasts into evenly sized pieces for even cooking.
- Any leftovers can be stored in an airtight container in the fridge or cooler.

I just discovered your website, and exploring all the tinfoil dinners, can they be cooked in a fire with no grill? or using the grill is the only cooking method?

Welcome! So glad that you’re here! Any of the foil packet dinners can be cooked directly on the fire – we would recommend doubling the foil layers for extra durability and placing over the coals (not open flame). Use a pair of long handle metal tongs for safely handling the packet.
